For a full extract batch, use roughly 6–7 lbs of Light DME per 5 gallons for a standard-strength beer; for gravity correction, each pound adds about 8–9 points to 5 gallons. For yeast starters, use about 100 grams per liter of water (roughly a 1.040 starter).
Add a portion late in the boil rather than all at the start to keep color light and hop utilization predictable, and whisk it in off the heat to prevent clumping.
